This qualification reflects the role of pastry chefs who use a wide range of well-developed patisserie skills and sound knowledge of kitchen operations to produce patisserie products. Using discretion and judgment, they work with some independence and under limited supervision using plans, policies, and procedures to guide work activities.
Individuals with this qualification may have titles including chef patissier or chef de partie and are able to perform roles such as:
- Supervising the pastry kitchen in a large hotel
- Supervising the pastry kitchen in a catering operation
- Supervising a small patisserie

PSW Opportunity
Post Study Work Steam Renames to Post Higher Education Work Steam.
- Bachelor degree holders including honours can get upto 2 years of post study stay
- Master by course work and extended (with a duration exceeding 2 years) can stay upto 2 years
- Masters by research (with a duration exceeding 2 years) and PhD holder can stay upto 3 years
- The Maximum eligible age to apply for PSW will be reduced to 35 years of age from 50 years of age for all applicants
Due to the Australian Indian Economic Cooperation and Trade Agreement signed by the 2 countries, according to which:
- Indian students completing bachelor degree including honours can stay upto 2 years
- Bachelor degree with First class honours in STEM including ICT can stay upto 3 years
- Masters by coursework in extended researched (with a duration exceeding 2 years) can stay upto 3 years
- PhD students can stay upto 4 years
Admission Requirement / Eligibility Criteria
It is highly recommended that students are currently in a workplace or have access to a workplace for this course.
For Certificate IV level courses, the recommended minimum level of education is Higher School Certificate or equivalent or relevant qualification (at Certificate III or above) or relevant vocational experience.
In addition, students may enter the qualification through a number of entry points demonstrating the potential to undertake vocational education and training at Certificate IV level including:
with personal or vocational experience in a specific industry;
with vocational experience in a specific industry and an industry-specific qualification.
Generally, to demonstrate English language proficiency for doing a Certificate or Diploma course, an international student needs one of the following test scores:
