Bachelor of Science (Honours) in Culinary Entrepreneurship

In this program, you’ll acquire the knowledge and practical skills you need to operate a culinary business, reflecting the development and professional practice of food and beverage industries worldwide.
The course builds on the strong links between food, wine, culinary practice, and business. An artisan is a highly-skilled, specialized individual who creates unique food entrepreneurial products. Examples include bread of specialist grain, raw milk cheese, dried and fresh pasta, chutneys and preserves, confectionery, charcuterie, and food products fit for sale or distribution
to artisan and delicatessen retail outlets and farmers’ markets.
You’ll take six artisan modules designed to equip you with the knowledge and skills to develop food products. The kitchen skills focus on artisan cookery.
Artisan food modules begin with an understanding of how to cook, progressing to the production and development of artisan food products.
In the first two years, you’ll gain practical skills in kitchens, restaurants and bar operations, including a supervised professional internship (work placement), and you’ll develop in-depth theoretical, academic knowledge and understanding of the food-related industries.
Further artisan food modules include Cake-Making, Introduction to Bread-Making, Chocolate-Making, Sugarcraft, and Speciality Meats, all of which will extend your knowledge so that you can produce
specialized products.
